Calendula, (Calendula Officinalis) commonly known as marigold, and a member of the daisy family, is a flower that not only brightens gardens with its vibrant yellow and orange blossoms, but also boasts a variety of health benefits. Directions for use:

Calendula tea:

One teaspoon of dried calendula flower to one cup of boiling water. Allow tea to steep for five minutes.

Calendula extract:

Fill a reusable glass jar 3/4 full with dried calendula flower, Fill the jar with 80 proof vodka. Store in a dark cool place for four to six weeks. Shake daily. Strain and store extract in a dark cool place. The tincture will last up to three years if stored correctly.

Edible use:

The flowers are edible and often used in salads. Calendula can also be used as a saffron substitute for color (not taste).
